In the Laboratory of Nutritional Biochemistry / Laboratory of Food Life Science, we study the physiological functions of nutrients and functional food components mediated through the gastrointestinal tract. Our research is based on precise quantitative analyses using experimental animal models and cell-based systems. The gastrointestinal tract is not only the site of digestion and absorption of dietary components but also serves as a critical barrier protecting the body from foreign substances and microorganisms.
